Enjoy an unforgettable day in the capital of gastronomy as you combine the pleasures of strolling the markets, choosing ingredients, composing a menu, preparing an authentic French meal, and savoring the delicious result with hand-picked wines.
THE MARKET Depending on the day of the class, the market tours can take place on la rue Montorgueil (click here to see David Lebovitz's thorough report), or at le Marché des Enfants Rouges, as seen in the video with Josée di Stasio. Paule has shopped at both for years and goes straight to the best and friendliest suppliers.
THE CLASSES Cooking classes are taught in Paule Caillat’s contemporary home kitchen, located in an easily accessible historic Marais building. With no more than eight students per class, you will relish an experience that is personalized, friendly and fun. The space, kitchen and adjoining dining/living room, is also available for private culinary events for groups up to fifteen. Classes start at 9:00 am with an open-air market tour, followed by a hands-on cooking class and a four-course lunch, finishing around 3 :00 pm. Each class includes a cheese tasting, along with discussion and explanation of the subtleties that make France’s fromage so unique. THE CUISINE « Cuisine bourgeoise » is the heart and soul of French cooking. Paule has updated these classic dishes to suit contemporary tastes. The menus for each class are customized to reflect the foods you love to cook and the recipes you want to discover. Gluten-free recipes can be included if necessary. All the recipes – both classic and modern – have been carefully adapted for the home cook. They can be easily recreated and enjoyed long after you return from Paris and are destined to become family favourites! Food professionals can also benefit from Paule’s insights on contemporary techniques and ingredients.
THE TOURS Our walking tour, offered independantly from the cooking class, introduces you to the best of gourmet Paris. Because they have been suppliers to Promenades Gourmandes for quite a while, you will be greeted as friends by these artisan producers who are all eager to share their expertise. You will walk through some of Paris’ most beautiful and least visited passages, and be given the perspective only a native parisian can provide. The tour is booked depending on availability and focuses on your specific interests.
ABOUT PAULE CAILLAT Native parisienne, thoroughly bilingual, Paule has shared her knowledge and passion for food with thousands of students since 1997. Thanks to her active relationships within the food world beyond the kitchen, she passes on the most current gastronomic informations and trends. More than simply offering instruction, Paule gives you an opportunity to enter a French home and get interactive viewpoints on many aspects of life in our rapidly changing world.
